Vegan Choc Chip Muffins




Trust me to catch the baking bug when I've sworn off chocolate for a month. Seems like there will be a lot of cakes for James to eat. I would offer them to my Mum but she isn't a fan of vegan baking. Shame.

Adapted from Sweet Vegan Blueberry Muffin Recipe

195g of plain flour
130g of golden caster sugar
2 teaspoons of baking powder
80ml vegetable oil
80ml unsweetened soya milk
3 teaspoons of egg replacer with 4 tablespoons of warm water
2 teaspoons vanilla extract
80g of dark chocolate

Makes 9 using muffin cases

Preheat oven to 180 oC or gas mark 4.
Combine dry ingredients then add the wet ingredients.
 Mixture is will be very thick. Cook for 18- 20 minutes.
Ta-daa lovely vegan muffins. These would be lovely eaten warm with peanut butter. Yum yum.

  1. Yum yum! How come your mum doesn't like vegan baking? I find it's just as nice if not nicer than regular baking ;)

    1. I think it's because my Mumma knows it doesn't have butter in it, she's a big butter fan lol! I love vegan baking :) xx
