Infinity Cafe, Brighton




When James and I went to Brighton, we went to the infinity cafe which is this lovely vegetarian/vegan place to eat. We ordered vegan food of course, there was so much choice, it took me so long to choose what I wanted.
In the end, I had the garlicky mushrooms and spinach on toast and James had the sausages tofu sandwich with wedges. We both tried each others food and I loved both dishes.
For pudding we had the amazing vegan chocolate cheesecake. It was the best cheesecake I've ever had! So amazingly good! It was thick and fudge-y and out of this world tasty.
This little place made me want to move to Brighton, if I did I'd be living on vegan chocolate cheesecake

Vegan Blueberry Muffins



I made these lovely muffins this morning! They are in the breakfast section of Sweet Vegan, which is the best book I've bought by far. 
They've got egg replacer in them which I've never used before, but I loved the results. I am a big fan of blueberry baked goods and now I've found the perfect vegan muffin recipe! 
I might even bake some for work as they always ask me if I can still eat cake, and indeed I can!

Vegan Chocolate Cupcakes



A recent change of heart meant baking some vegan cupcakes!!
I made them from a Lola's recipe which I adapted to make them chocolate cupcakes rather than red velvet. The buttercream was so delicious! I actually ate some straight from the piping bag, yes I know I am disgusting.
They were tested by James's family, including his grandparents. I had such reviews as "they are almost like normal food" and "where's my second cupcake??" Pretty impressive reviews if you ask me.
Anyway I thought they were yummy and will be baking them again soon.
I'll post the recipe soon once I'm back from Brighton!
